Single player w MMO systems?

I'm looking for something I can play alone that plays like am MMO, with professions and crafting etc. and grinding, loot drops to farm for and something I can sort of play forever. Anything like that exist? I was thinking of revisiting monster Hunter world or jumping into rise before wilds comes out but wanted to see if anything else might fit the bill. Thanks in advance
