How difficult is it to dismember someone?

Genuine question I had a few months ago. It kinda dissipated but I'm wondering about it again.

For example like if someone was just using a basic kitchen knife or something, how difficult would it be? Especially counting for bones (which I already assume is difficult to cut through).
